One Curve Explains Most Afternoon Cravings
Almost everything people call willpower failure in the afternoon is a physiological event with a name and a shape. Understanding the shape is more useful than any amount of resolve.
The Climb
Eat carbohydrate and glucose enters your bloodstream. How fast depends on what the carbohydrate came packaged with. White bread and a sugary drink arrive almost immediately. The same calories inside beans, oats or a meal containing protein and fat arrive gradually, because digestion has more work to do first.
Fast arrival means a steep line on a graph. Gradual arrival means a gentle one.
The Response
Insulin is the signal instructing cells to take glucose out of circulation. A steep climb calls for a large response, and a large response tends to overshoot — pushing you not back to baseline but somewhat below it.

Fibre alongside it. Slows gastric emptying and feeds gut bacteria. Vegetables, beans, lentils, whole grains, fruit with the skin on.
